Sake is an alcoholic beverage, made by fermenting rice. Sake is dated to more than a thousand years ago in Japan and over time Sake has evolved into an extremely refined beverage. As Sake is intended to be a social drink, there is a Japanese custom that you shouldn’t fill your own cup of Sake, someone else at the table must pour it for you. This is to ensure you always drink with friends. The traditional toast for Sake is “Kanpai!”
Junmai means ‘Pure rice Sake’. Brewed using only rice, koji (mould), water and yeast with no additives. Considered a good food match due to its richness and strength of flavour.
Made with rice polished between 51% – 60%. A premium level sake.
Made with rice polished to at least 50% (often much more). An ultra premium level sake.
Cloudy sake. Partially filtered to retain some of the rice sediment that provides a chalky or rich creamy mouthfeel depending on the degree of filtration.
A traditional method of making sake whereby koji (mould) is allowed time to sit and dissolve the rice over a longer period of time than other methods. Kimoto sakes typically display a wild gamey flavour.

Shochu (Fiery Spirit) is a clear distilled spirit made from a variety of base ingredients, but commonly rice, barley, sweet potato and wheat. It has a higher alcohol content than sake, generally 25-30% by volume, and can be had neat, over ice, with hot or cold water, or a mixer.
Shiro No Takumi (White Expert) Rice
Made from 100% Japanese grown rice, Shiro No Takumi is a super smooth and clean shochu. Slow, low temperature fermentation, a gentle distillation process, and bamboo charcoal filtration result in a beautiful fruity fragrance, light refreshing palate and a crisp dry finish.
Hitotsubu No Mugi Barley
Everything you expect out of a Barley Shochu and more. Full of Umami and Barley flavour, with a sharp top note in the aroma, and the light fragrance of wheat at the base. Has a creamy, buttery quality that makes it difficult to stop drinking.
Tenshi No Yuwaku Sweet Potato
A highly prized Imo Shochu aged in Sherry Barrels and made with premium sweet potatoes and white koji. This Shochu has a thick and creamy texture, and sophisticated and elegant aroma. Shares brandy and sherry characteristics, while retaining all the richness of a sweet potato genshu.
